Breakfast Spinach, Tomato and Cheese Frittata

Serves: 1

2 egg
1 cup of spinach
½ diced tomato
1 slices of swiss cheese
2 tablespoon of almond milk
1 tablespoon of coconut oil
Salt and pepper to taste

1.Lightly beat the eggs with a fork and add milk.
2.Add salt and pepper to taste, and stir to combine; set aside. 3.Add spinach and tomatoes to sauté pan with the coconut oil and heat over medium heat on stove until spinach wilts slightly.
4. Add the eggs and add the swiss cheese and cook until edges begin to set.
